For the strawberry syrup you will need
- 300 g fresh strawberries (washed and chopped)
- 100 ml water
- Juice of half a lemon
- 2 tablespoons of sugar
Place the strawberries, water, lemon juice and sugar in a saucepan.
Bring to the boil, then simmer for 5 minutes. Puree finely with a hand blender and pass through a fine sieve.
Leave to cool and pour into a clean bottle.
For the iced strawberry latte:
- Iced cubes
- 40 ml strawberry syrup
- 120 ml cold frothed milk of your choice
- 1 shot of espresso
- Fresh strawberry slices to garnish
Fill a glass with ice. Pour in the strawberry syrup, then slowly add the cold, frothed milk. Top up with a shot of espresso and garnish with fresh strawberry slices.
